<p style="text-align: justify;">Generalmente,<strong> in Svezia i dolci sono</strong> <strong>mooolto dolci</strong>. I dolci americani, doooolci anche loro, derivano in parte dalla tradizione svedese, a causa dei massicci flussi di emigrazione che dalla Svezia giunsero negli Stati Uniti, soprattutto nella seconda metà del diciannovesimo secolo. Il brownie, ad esempio, somiglia tantissimo alla <strong>kladdkaka</strong>, la <strong>torta al cioccolato svedese</strong>, anche se quest&#8217;ultima ha un cuore più morbido rispetto al suo cugino d&#8217;oltreoceano.<span id="more-972"></span></p>
<p style="text-align: justify;">Nonostante la storia non documenti una correlazione diretta tra questi due dolci, secondo me si somigliano molto. Ne ho avuto la riprova stamattina quando ho preparato la mia prima <strong>kladdkaka</strong>, leggendo la lista degli ingredienti:</p>

<li class="ingredient">3 dl di zucchero</li>
<li class="ingredient">2 dl e 1/2 di farina</li>
<li class="ingredient">1 cucchiaio di zucchero vanigliato</li>
<li class="ingredient">1/2 cucchiaino di lievito in polvere per dolci</li>
<li class="ingredient">un pizzico di sale</li>
<li class="ingredient">4 uova intere</li>
<li class="ingredient">1 dl di cacao amaro in polvere</li>
<li class="ingredient">80 grammi di cioccolato fondente</li>
</ul>

<li class="instruction">Scaldate il forno a 175°C; imburrate e infarinate una tortiera tonda, del diametro di circa 20 cm e dai bordi abbastanza alti.</li>
<li class="instruction">Fondete il burro a bagnomaria con il cioccolato fondente.</li>
<li class="instruction">In una ciotola capiente, frullate con le fruste elettriche i due tipi di zucchero, il sale, il lievito, le uova ed il cacao, montando per bene il composto.</li>
<li class="instruction">Aggiungete a filo il burro e il cioccolato fusi, sempre mescolando con le fruste elettriche, ma diminuendo leggermente la velocità.</li>
<li class="instruction">Aggiungete la farina, due cucchiai alla volta, e mescolate con le fruste alla velocità più bassa.</li>
<li class="instruction">Versate l&#8217;impasto nella tortiera imburrata e infarinata, cuocendo in forno caldo per circa 20 minuti.</li>

<p style="text-align: justify;">Ho riadattato parzialmente la ricetta da quella che ho trovato nel giornalino che mi manda ogni mese il <a title="ICA, supermercato svedese" href="http://www.ica.se/" target="_blank">supermercato ICA</a> (ho la tessera fedeltà di quasi tutti i maggiori negozi svedesi, ditene una e la pesco dal portafogli!). Ho messo <strong>meno zucchero</strong>, che vabbé deve essere dolce, ma senza esagerare! Non avevo tutto il cacao necessario, per cui ho sopperito la mancanza con <strong>un pezzo di cioccolato fondente</strong> che giaceva orfano nella dispensa. Non era previsto <strong>lievito</strong>, ma ho barato e ne ho aggiunto proprio un pochino, per star tranquilla <img src='http://www.fudgella.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  Inoltre, <strong>ho allungato il tempo di cottura</strong>, altrimenti il centro della torta sarebbe rimasto troppo liquido.</p>

<p style="text-align: justify;">La quantità di zucchero e farina è in decilitri, la misura comunemente usata nelle ricette svedesi. Non ho pesato gli ingredienti, per cui non so dirvi il loro equivalente in grammi. Per questa ed altre ricette potete comunque usare un qualsiasi bicchiere graduato che avete in cucina, oppure trascinare il vostro marito/fidanzato/compagno all&#8217;Ikea con la scusa che avete assolutamente bisogno <a title="Misurino dl Ikea" href="http://goo.gl/IXMsw" target="_blank">dello stesso misurino</a> che ho comprato anch&#8217;io <img src='http://www.fudgella.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' /> </p>

Qualche settimana fa, in occasione di <strong><span style="color:#800080;">una cenetta tra amici</span></strong>, mi sono cimentata nella sua preparazione, combinando più ricette e una buona dose di ispirazione sul momento <img src='http://www.fudgella.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' /> </p>

<p style="text-align:justify;">Per la torta in sé per sé, ho usato la ricetta della <span style="color:#800080;"><strong>Torta al Cioccolato e Panna Acida</strong></span> di <a title="How To Be A Domestic Goddess, by Nigella Lawson" href="http://www.waterstones.com/waterstonesweb/displayProductDetails.do?sku=4624637" target="_blank">Nigella Lawson</a> (Sour Cream Chocolate Cake), che a sua volta ha attinto dalle ricette di <a title="Real Baking With Rose Levy Beranbaum" href="http://www.realbakingwithrose.com/" target="_blank">Rose Levy Beranbaum</a>. Per la farcitura, ho usato parte della ricetta per la <span style="color:#800080;"><strong>Schwarzwald Chocolate Cherry Cak</strong></span>e che ho trovato in <a title="Sju Sorters Kakor, Swedish Cakes And Cookies" href="http://www.anobii.com/books/Swedish_Cakes_and_Cookies/9781602392625/0181b41d33dab4be90/" target="_blank">Sju Sorters Kakor</a>, il mio meraviglioso librino svedese di dolci, comprato a <a title="La merenda a tutte le ore di Stoccolma" href="http://fudgella.wordpress.com/2008/01/21/fika-eller-cafeer-i-stockholm/" target="_blank">Stoccolma</a> a un anno fa.<span id="more-242"></span></p>
<p style="text-align:left;">Preparate quindi la torta, mescolando in una ciotola capiente:</p>
<p style="text-align:left;"><strong><span style="color:#800080;">1 tazza e 1/3 di farina </span></strong></p>
<p style="text-align:left;"><strong><span style="color:#800080;">3/4 di tazza di zucchero</span></strong></p>
<p style="text-align:left;"><strong><span style="color:#800080;">1 cucchiaino</span></strong> abbondante di lievito vanigliato in polvere</p>
<p style="text-align:left;">mezzo cucchiaino di sale fino</p>
<p style="text-align:justify;">Quando avrete ben mescolato il tutto, aggiungete <span style="color:#800080;"><strong>90 grammi di burro morbido</strong></span> e mescolate con un mixer elettrico (io uso le doppie fruste, purtroppo sono sprovvista dell&#8217;<a title="Kitchen Aid Freestanding Mixer" href="http://www.kitchenaid.it/app.cnt/ka/it_IT/pageid/pgkaproddetail001/catid/7/subcatid/35" target="_blank">oggetto dei miei desideri</a>). In un&#8217;altra ciotola, sbattete circa <span style="color:#800080;"><strong>100g di philadelphia</strong></span> con <span style="color:#800080;"><strong>3 cucchiai abbondanti di cacao</strong></span> amaro in polvere, <span style="color:#800080;"><strong>2 uova grandi</strong></span> e <span style="color:#800080;"><strong>un cucchiaino di aroma vaniglia</strong></span>.</p>
<p style="text-align:justify;">Unite questo composto liquido a quello solido precedentemente preparato, mescolando finchè non diventa uniforme, quindi versatelo in una<span style="color:#800080;"><strong> teglia tonda di circa 22 cm</strong></span> di diametro e infornate <span style="color:#800080;"><strong>a 170°C per circa 30 minuti</strong></span>. Lasciate raffreddare dieci minuti nella teglia, quindi sformate e fate raffreddare completamente su una griglia per dolci.</p>

<p style="text-align:justify;">Mentre cuoce la torta, preparate le <span style="color:#800080;"><strong>ciliegie sciroppate</strong></span>, se, come me non le avete trovate già pronte in barattolo al supermercato: ho comprato una busta di <span style="color:#800080;"><strong>ciliegie surgelate</strong></span> da <strong><span style="color:#800080;">circa 150g</span></strong>, le ho fatte decongelare in una ciotola, le ho divise a metà e le ho fatte cuocere con <span style="color:#800080;"><strong>mezza tazza di zucchero</strong></span> finchè non hanno raggiunto il bollore, quindi le ho spente e le ho scolate dal succo. Ho mescolato il succo con un po&#8217; d&#8217;acqua per far sì che arrivasse ad essere <span style="color:#800080;"><strong>circa 1 tazza</strong></span>, quindi ho aggiunto <span style="color:#800080;"><strong>un cucchiaino abbondante di amido di mais</strong></span> e ho scaldato il tutto finchè non si è addensato. Ho aggiunto le ciliegie, precedentemente messe da parte, e ho fatto raffreddare.</p>

<p style="text-align:justify;">Una volta raffreddata la torta e pronte le ciliegie, non dovete far altro che montare <span style="color:#800080;"><strong>mezzo litro di panna liquida</strong></span> con <span style="color:#800080;"><strong>un paio di cucchiai di zucchero a velo</strong></span> e cominciare a farcire la vostra torta a piacere: aprite la torta, farcite con le ciliegie, chuidete e sbizzarretevi con panna e riccioli di cioccolato.
