<p style="text-align: justify;">Tempo fa, folgorata dalle recensioni lette e cedendo ad uno dei miei attacchi di shopping online compulsivo, comprai il bellissimo libro di Tessa Kiros, <span style="color: #008000;"><strong><a title="Falling Cloudberries di Tessa Kiros su Amazon.com" href="http://www.amazon.com/Falling-Cloudberries-World-Family-Recipes/dp/0740781529/ref=sr_1_2?ie=UTF8&amp;qid=1319999265&amp;sr=8-2" target="_blank"><span style="color: #008000;">Falling Cloudberries</span></a></strong></span>. La ricetta per le kanelbullar era così semplice e invitante che me la sono scritta subito nel ricettario delle emergenze, quello che tenevo sempre a portata di mano come le cose sante. Quel famoso ricettario è rimasto a Pisa, motivo per cui, in un anno che abito a Stoccolma, ho fatto le kanelbullar una volta soltanto, ovvero domenica scorsa, invece di scrivere la literature review per la mia tesi di laurea. Che ci volete fare, è stato più forte di me. E poi, quelle belle boccettine di aromi per dolci comprate allo <span style="color: #008000;"><strong><a title="Kista Grossen, supermarket etnico a Stoccolma" href="http://www.kistagrossen.com/" target="_blank"><span style="color: #008000;">Kista Grossen</span></a></strong></span>, quando me le volevate far usare? Non possono mica rimanere sullo scaffale della cucina in eterno, giammai.<span id="more-867"></span></p>

<p style="text-align: justify;">Kanelbullar di Tessa Kiros, viste da <a title="Ikea Kondis e Kanelbullar - ComidaDeMama" href="http://www.montag.it/comida/2010/10/_a/" target="_blank">ComidaDeMama</a> (<em><a title="Falling Cloudberries, Tessa Kiros - su Anobii" href="http://www.anobii.com/books/Falling_Cloudberries/9781741964318/01a7ec79b7d3053bd8/" target="_blank">Falling Cloudberries</a></em> ed il ricettario, come dicevo, sono rimasti a Pisa!)</p>
<p style="text-align: justify;">Preparate un impasto morbido ed elastico con 650 grammi di farina e un composto liquido fatto con: 250 grammi di latte tiepido, 100 grammi di zucchero, 25 grammi di lievito di birra (o 3-4 tsp di lievito secco), 1 uovo, 125 grammi di burro (mettetelo a fondere nel latte mentre lo scaldate), due pizzichi di sale e due cucchiai di semi di cardamomo.</p>
<p style="text-align: justify;">Lavorate molto bene su un piano infarinato, fino ad ottenere una palla liscia e morbida. Ponete l&#8217;impasto in una ciotola capiente, coprite con un foglio di pellicola, un asciughìno (o canovaccio, se non siete delle mie parti <img src='http://www.fudgella.com/wp-includes/images/smilies/icon_razz.gif' alt=':P' class='wp-smiley' />  ) e mettete a lievitare nel forno spento (funziona sempre).</p>

<p style="text-align: justify;">Fate lievitare due ore, o anche di più se avete tempo. Dividete quindi l&#8217;impasto in quattro parti, che vi serviranno per stendere altrettanti rettangoli di pasta, di dimensioni pari ad un tagliere Ikea (manco a farlo apposta) <img src='http://www.fudgella.com/wp-includes/images/smilies/icon_biggrin.gif' alt=':D' class='wp-smiley' /> </p>
<p style="text-align: justify;">Spalmate su ogni rettangolo un impasto fatto con 25 grammi di burro, 25 grammi di zucchero e, a seconda dei gusti, cannella, cioccolato a pezzi, frutta secca, frutta disidratata, insomma quello che più vi piace. Se volete essere fedeli alla tradizionale bulle scandinava, fate come me e aggiungete cannella a due dei rettangoli, ed essenza di pistacchio agli altri due.</p>

<p style="text-align: justify;">parentesi: per le pistagebullar ci vorrebbe la mandelmassa, praticamente una pasta di mandorle, a cui vengono aggiunti pistacchi tritati, oppure del colorante verde e dell&#8217;essenza di pistacchio. Lo so, vi sto facendo vedere la versione cheap, ma sono una povera studente a budget ridotto <img src='http://www.fudgella.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' /> </p>

<p style="text-align: justify;">Scaldate il forno a 180°. Arrotolate i vostri rettangoli sul lato lungo e tagliateli a rondelle spesse circa quattro centimetri. Allineate le rondelle sulla teglia del forno, spennellatele con un uovo sbattuto e fatele lievitare ancora per circa mezz&#8217;ora. Cuocete poi per circa 15 minuti, avendo cura di lasciare le bullar dorate, ma non troppo abbronzate. Con queste dosi e formando dei rettangoli di circa 29&#215;37 cm (che poi sono le dimensioni del mio tagliere, ma guarda te!), otterrete circa 40 bullar. Non male, eh?</p>

<p style="text-align: justify;">Sembra che la <span style="color: #ff0000;"><strong>babka</strong></span>, un dolce di origini esteuropee, sia parente del babà francese (anzi, il contrario), e infatti, se ci pensate, il nome è abbastanza simile. <span style="color: #ff0000;"><strong>Baba</strong></span>, o <span style="color: #ff0000;"><strong>babka</strong></span>, in polacco significa &#8220;nonna&#8221; o &#8220;anziana signora&#8221; e infatti è il dolce preferito delle donnine che abitano con <a title="Babka! from The Nanny, Smoke Gets In Your Lies episode" href="http://www.flickr.com/photos/fudgella/5090470262/" target="_blank">Yetta</a> alla casa di riposo&#8230;<span id="more-678"></span></p>
<p style="text-align: justify;">Mi piacciono le brioche dolci per colazione: vivendo nella patria delle kanelbullar, non passa giorno che non ne senta l&#8217;odore mentro entro in metropolitana o cammino per le vie del centro. Ho pensato allora di prepararmi una babka per  la colazione, adattando una ricetta presa da <a title="The Pioneer Woman | Ree Drummond" href="http://thepioneerwoman.com/" target="_blank">The Pioneer Woman</a> sulla base degli ingredienti che avevo in casa. La vera babka che trovate nelle bakeries newyorkesi è ripiena di cioccolato, ma io non ce l&#8217;avevo e ho ripiegato su una fantastica uvetta rossa che ho comprato al mercato coperto di <a title="Hötorgshallens " href="http://www.hotorgshallen.se" target="_blank">Hötorgshallens</a>.</p>
<p style="text-align: justify;">Ed ecco gli ingredienti ed il procedimento:</p>
<ul>
<li>2 cups di farina (275 grammi)</li>
<li>1/2 cup di latte (io ho usato 80 grammi di acqua e mezzo cucchiaio di <a title="Messmör, né Burro né Formaggio | Fudgella.com" href="http://www.fudgella.com/2010/10/messmor-ne-burro-ne-formaggio/" target="_blank">Messmör </a>- ormai lo devo finire!)</li>
<li>3 tbsp e 1/2 di burro (50 grammi)</li>
<li>1,5 tsp di lievito di birra liofilizzato</li>
<li>1 uovo intero</li>
<li>1/2 tsp di sale</li>
<li>1/4 cup di zucchero (50 grammi)</li>
<li>50 grammi di burro morbido per il ripieno, più una manciata abbondante di uvetta rossa (o ciò che preferite)</li>
</ul>
<p style="text-align: justify;">Fondete il burro in un pentolino, aggiungete il latte (o, nel mio caso, l&#8217;acqua e il Messmör) e fate intiepidire, quindi aggiungete il lievito liofilizzato e fate riposare per circa dieci minuti, un quarto d&#8217;ora. Tenete da parte. Nel frattempo, setacciate la farina, unitevi il sale e mettete da parte.</p>

<p style="text-align: justify;">Sbattete l&#8217;uovo con lo zucchero, unitelo al &#8220;lievitino&#8221; e mescolatelo alla farina. Impastate velocemente in una zuppiera aiutandovi con un cucchiaio o un mestolo di legno: otterrete un impasto abbastanza appiccicoso, per cui sarebbe meglio non toccarlo direttamente con le mani <img src='http://www.fudgella.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' />  aggiungendo farina rischiereste di farlo diventare troppo duro, invece.</p>

<p style="text-align: justify;">Lasciate lievitare per circa due ore in un luogo tiepido e al riparo dalle solite pericolose correnti d&#8217;aria. Intanto che aspettate, tirate fuori circa 50 grammi di burro dal frigorifero e fatelo ammorbidire a temperatura ambiente: una volta diventato morbido, mescolatelo con zucchero e cannella a piacere e mettete da parte.</p>

<p style="text-align: justify;">Adesso tirate fuori la pasta per la babka, che a questo punto si spera che abbia lievitato a dovere. Stendetela a formare un rettangolo, non chiedetemi le misure perché proprio non le so: diciamo che deve risultare una sfoglia abbastanza sottile, ma allo stesso tempo resistente. Spalmate il burro preparato sulla pasta e cospargete di uvetta (o quel che è) <img src='http://www.fudgella.com/wp-includes/images/smilies/icon_biggrin.gif' alt=':D' class='wp-smiley' /> </p>

<p style="text-align: justify;">Arrotolate adesso la vostra babka e, se ci riuscite, mettetela in uno stampo da plumcake, dove riposerà al caldo per un&#8217;altra oretta almeno. Io ho fatto un rotolo decisamente troppo lungo, che non poteva entrare nel mio miserrimo stampo da plumcake, e così l&#8217;ho adattato in una ciambella:</p>

<p style="text-align: justify;">Fate lievitare nuovamente la babka, ancora al caldo, e ancora finché la pasta non raddoppia in volume:</p>

<p style="text-align: justify;">Adesso siete pronti per cuocerla! Saranno sufficienti trenta minuti circa (io ce l&#8217;ho tenuta troppo, e si vede!) in forno caldo a 180° (statico, non ventilato nel mio caso):</p>

Mi avevate data per dispersa, vero? E invece sono tornata&#8230; bando alle ciance, devo assolutamente farvi vedere una cosa, o mi si adira la madre:</p>

<p align="justify">Questa bella tortona l&#8217;ha fatta la mia mamma per il mio compleanno: trattasi di tale <span style="color:#eb136e;"><strong>Torta delle Rose</strong></span>, ovvero un insieme di brioscine morbide, ripiene di burro e zucchero, cotte una accanto all&#8217;altra, come se fossero proprio un mazzo di roselline in boccio. Si serve tiepida, non caldissima, con una bella spolverata di zucchero a velo. Ecco la dose per riempire una teglia di circa 28 cm di diametro:<span id="more-119"></span></p>
<ul>
<li>3 tuorli d&#8217;uovo</li>
<li>1 cucchiaio di zucchero</li>
<li>2 cucchiai di olio di semi</li>
<li>1 bustina di vanillina, oppure un cucchiaino di estratto di vaniglia</li>
<li>la scorza di un limone, grattugiata fine</li>
<li>1 pizzico di sale</li>
<li>150 g di latte</li>
<li>25 g di lievito di birra fresco</li>
<li>350 g di farina</li>
<li>150 g di zucchero e 150 g di burro morbido per il ripieno</li>
</ul>
<p align="justify">Sciogliete il lievito nel latte tiepido: aggiungete lo zucchero, la vaniglia, il limone, l&#8217;olio e i tuorli d&#8217;uovo, mescolando ben bene. Unite la farina e il sale, quindi impastate per circa cinque minuti, o anche di più se avete pazienza <img src='http://www.fudgella.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' />  . Fate lievitare la pasta, finché non raddoppia di volume, in un luogo caldo, al riparo da spifferi e correnti d&#8217;aria.</p>
<p align="justify">Nel frattempo ungete una teglia di burro: tagliate quindi un pezzo di pasta, stendetelo in modo che sia sottilissimo e con esso rivestite il fondo della teglia. Il resto della pasta dovrà essere diviso in due parti: ognuna di esse andrà stesa a forma di rettangolo, quindi spalmata con il ripieno di burro e zucchero ed infine arrotolata su se stessa seguendo il lato lungo.</p>
<p align="justify">Tagliate ora i rotoli in cilindri alti circa 4 cm: poneteli nella teglia precedentemente preparata, con il lato tagliato rivolto verso l&#8217;alto, e fate lievitare nuovamente, finché non saranno tutti belli appiccicati l&#8217;uno all&#8217;altro. Cuocete in forno caldo, a 180° C, per circa mezz&#8217;ora.</p>
