<p>(ANSA) &#8211; ROMA, 6 AGO &#8211; Con oltre 24 milioni di grigliate estive gli italiani si collocano al quinto posto nella classifica mondiale degli amanti del barbecue. Cucinare la carne alla brace e&#8217; un&#8217;attivita&#8217; che coinvolge il 38% della popolazione. E&#8217; quanto afferma una stima della Confederazione italiana agricoltori (Cia), precisando che questa estate ammontera&#8217; a 8 kg il consumo medio pro-capite di carne per famiglia-tipo. Regina dei barbecue nostrani e&#8217; la carne suina (42%), seguita da manzo (38%) e pollame (15%).</p>

<p style="text-align: justify;">Niente neve, quest&#8217;inverno, a Stoccolma. Novembre è quasi finito, e ancora neanche una spruzzata di nevischio. Se penso che l&#8217;anno scorso di questi tempi c&#8217;erano -24 gradi rabbrividisco, la differenza è immensa. Per cui, quando guardo gli stivali di gomma che prendono posto nell&#8217;ingresso, non so se essere contenta perché non devo camminare affondando in cumuli di neve, oppure essere incavolata perché i suddetti stivali prendono solo posto e perché per ora l&#8217;atmosfera natalizia scarseggia. La città è già addobbata a festa, infatti domenica scorsa c&#8217;è stata l&#8217;inaugurazione ufficiale dell&#8217;illuminazione comunale e delle nuove vetrine natalizie di <a title="Nordiska Kompaniet, Stoccolma" href="http://www.flickr.com/photos/fudgella/5793094606/" target="_blank">NK</a>, ma a dir la verità sembra d&#8217;essere a Pisa da quanto il cielo è grigio <img src='http://www.fudgella.com/wp-includes/images/smilies/icon_biggrin.gif' alt=':D' class='wp-smiley' />  <span id="more-929"></span></p>

<p style="text-align: justify;">Ma sto divagando. Quello che volevo dire è che, dato che l&#8217;inverno tarda ad arrivare, io posso permettermi di proporvi un piccolo cliché della cucina autunnale. Andiamo anche in nuance, dal marrone all&#8217;arancio al color crema, che volete di più? Lo so che di ricette come questa se ne trovano a bizzeffe in rete, ma io sono più simpatica delle bizzeffe <img src='http://www.fudgella.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p style="text-align: justify;"><strong>Lasagne di zucca con funghi e bacon</strong></p>
<p style="text-align: justify;"><em>per quattro persone</em></p>
<ul>
<li>200 grammi di pasta fresca per lasagne</li>
<li>400 grammi circa di zucca, già pulita, a tocchetti</li>
<li>150 grammi di funghi (io ho usato i portobello)</li>
<li>100 grammi di bacon a cubetti</li>
<li>besciamella, preparata con 50 grammi di burro, 50 grammi di farina e 500 ml di latte</li>
<li>parmigiano grattugiato, cheddar a scaglie, fiocchetti di burro</li>
<li>salvia, noce moscata, pepe e sale</li>

<p style="text-align: justify;">Rosolate il bacon in una padella: scolate il grasso in eccesso, quindi aggiungete la zucca, le spezie, i funghi e un paio di cucchiai di acqua. Coprite con un coperchio e fate cuocere per circa 15 minuti. Scaldate il forno a 180°C e ungete di burro una teglia: disponete qualche cucchiaio di besciamella sul fondo, quindi un primo strato di pasta e poi uno di zucca. Coprite con i formaggi e continuate seguendo questa successione fino ad esaurire le sfoglie di pasta, concludendo con uno strato di zucca e formaggi. Coprite con fiocchetti di burro, cuocete in forno per circa 25 minuti e&#8230; buonappe! <img src='http://www.fudgella.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

<br />Sabato 31 era l&#8217;ottantesimo compleanno della mia nonna(&#8230;vi posterei una foto della simpatica donnina, ma non ce l&#8217;ho sottomano&#8230;) e per l&#8217;occasione la mia mamma mi ha incatenata ai fornelli per fare le crepes (:D non è vero, è stata una mia libera scelta!!!)! Ci ho perso due ore, ma alla fine ne ho fatte 43, che sono state poi riempite con asparagi, gamberetti e zucchine&#8230; buone!</p>

<p style="text-align: left;">Non ho fatto in tempo a fotografare le due teglie finali, visto che sono finite piuttosto rapidamente, ma posso assicurarvi che sono piaciute molto!<br />
Per fare circa 45 crepes ho usato 8 uova, mezzo litro di latte e più o meno 15 cucchiai di farina, ma dovete vedere voi lì per lì che consistenza assume la pastella.</p>

<p style="text-align: left;">Il procedimento è semplice: se per esempio usate due uova, le sbattete insieme a 4 cucchiai di farina setacciata. Deve venire un&#8217;impasto denso ed elastico, tipo quello del ciambellone. Poi, gradatamente, aggiungete il latte a filo, mescolando fino ad ottenere un impasto che sia fluido, ma non troppo liquido. La consistenza giusta assomiglia a quella di una crema inglese. Come tante delle cose che faccio, la regola è quella del &#8221;poi vedi te&#8221;&#8230;</p>

<p style="text-align: left;">Per il ripieno, idem con patate, nel senso che è stato fatto ad occhio (da mammina), quindi posso solo dirvi: tanti zucchini (quattro?), tanti asparagi, cipolla, gamberetti e peperoncino; un&#8217;aggiunta di besciamella per condire, fiocchetti di burro e via in forno caldo per circa venti minuti&#8230; buoneeeee <img src='http://www.fudgella.com/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' />  !</p>

<p style="text-align: justify;">A casa mia si chiama <em>magro</em>. Piace a tutti, il <em>magro</em>. Trattasti di secondo piatto estremamente versatile, perché buono sia caldo sia freddo. Collochiamolo insieme in un esempio di conversazione tipica, per farvi capire meglio il contesto in cui si situa questo post:</p>

<p style="text-align: justify;">Il magro è, semplicemente, il roastbeef, o, come lo chiamava Pellegrino Artusi, il <em>rosbiffe</em>. La ricetta n° 521 de <a title="La Scienza in Cucina e l'Arte di Mangiar Bene, di Pellegrino Artusi" href="http://books.google.com/books?id=lRBCwF2LS2IC&amp;printsec=frontcover&amp;dq=inauthor:%22Pellegrino+Artusi%22&amp;hl=en&amp;ei=H6W7TvfxJsLP4QSc8dG2CA&amp;sa=X&amp;oi=book_result&amp;ct=book-thumbnail&amp;resnum=2&amp;ved=0CDYQ6wEwAQ#v=onepage&amp;q=rosbiffe&amp;f=false" target="_blank">La Scienza in Cucina e l&#8217;Arte di Mangiar Bene</a> ci dice che questo è un piatto &#8220;(&#8230;) di gran compenso in un pranzo ove predomini il genere maschile, il quale non si appaga di briccicche come le donne; ma vuole ficcare il dente in qualche cosa di sodo e di sostanzioso&#8221;. Fantastico sessismo d&#8217;altri tempi, direi. Vorrei perciò contraddire pubblicamente Pellegrino dicendo che il roastbeef, dopo la <a title="Trattoria da Benito, Orentano" href="http://www.fudgella.com/2008/05/trattoria-da-benito-orentano/" target="_blank">bistecca</a>, è il mio piatto di carne preferito.</p>

<p style="text-align: justify;">Torniamo brevemente al discorso iniziale, ovvero il concetto di roastbeef applicato al contesto della mia famiglia. La mia formazione mi ha insegnato che, al momento in cui una persona (generalmente di genere femminile) è in grado e ha la volontà di cuocere un <em>pezzo di magro</em> in maniera spontanea ed autonoma, questo evento segna il passaggio effettivo alla maturità psichica e domestica (soprattutto). Rispondere alla domanda materna: &#8220;cosa ti fai stasera per cena?&#8221; con la frase: &#8220;Ho cotto un pezzo di magro&#8221; è stato ciò che ho fatto pochi giorni fa, sigillando per sempre il mio ingresso nell&#8217;età adulta. Sono una donna di casa, e questo post è il mio diploma ufficiale.</p>

<p style="text-align: justify;">Come ho fatto, quindi? Ho comprato un non meglio identificato taglio di manzo, perché devo sempre familiarizzare con i tagli svedesi. Hanno un modo tutto loro di tagliare la carne, e giustamente eh, per carità, ma non ci capisco una mazza. Dalle foto della cottura, se avete l&#8217;occhio di lince, vedrete che quello che credevo fosse <em>magro</em> in realtà <em>magro</em> non era (per intendersi, non era né lombata né tantomeno scamone), per cui il risultato è stato leggermente diverso, ma comunque gustoso. Ho tolto la retina in cui era confezionato, fatto delle incisioni nella carne e riempito queste piccole cavità con pezzetti di aglio, sale, pepe e salvia. Ho rotolato il pezzo così condito in un misto di sale e pepe. Ho rosolato la carne a fiamma vivace per circa cinque minuti, sfumato con mezzo bicchiere di vino rosso e proseguito la cottura, aggiungendo mezzo bicchiere d&#8217;acqua, per circa venti minuti a fuoco moderato. Dopo una mezz&#8217;oretta di riposo, la carne è pronta per essere affettata e servita, come piace al Ciarla, con spinaci al burro <img src='http://www.fudgella.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

<p style="text-align:justify;">La ricetta della focaccia che ho preparato stasera per cena l&#8217;ho presa dal meraviglioso libro di <strong>Giorgio Locatelli</strong>, <a title="Made In Italy - Giorgio Locatelli" href="http://www.anobii.com/books/Made_in_Italy/9781841157023/012d80320fb321ace9/" target="_blank">Made In Italy &#8211; Food And Stories</a>, che <a title="Consigli per Regali di Natale? Libri di Cucina!" href="http://fudgella.wordpress.com/2008/11/18/consigli-per-regali-di-natale-libri-di-cucina/" target="_blank">ho comprato l&#8217;anno scorso</a> dopo il <a title="Salone del Gusto 2008" href="http://www.flickr.com/photos/fudgella/sets/72157615923614806/" target="_blank">Salone del Gusto</a>. Questa preparazione in realtà è la <em>fantastic foolproof focaccia</em> di <strong>Federico Turri</strong>, il panificatore della <strong>Locanda Locatelli</strong>: ho apportato delle piccolissime modifiche, giusto per vedere come andava&#8230; <img src='http://www.fudgella.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  ed è andata benissimo!</p>

<p style="text-align:justify;">Prima cosa, accendete il forno a 220°; in una ciotola sbattete <strong><span style="color:#008080;">65 grammi di acqua tiepid</span></strong>a, <span style="color:#008080;"><strong>65 grammi di olio extravergine</strong></span> e <strong><span style="color:#008080;">25 grammi di sale</span></strong>, ottenendo <span style="color:#008080;"><strong>la salamoia</strong></span>. Mettete da parte, ma non scordatevela!</p>
<p style="text-align:justify;">In una ciotola mescolate <span style="color:#008080;"><strong>mezzo chilo di farina di forza</strong></span>, <strong><span style="color:#008080;">10 grammi di sale</span></strong> (non mettetelo a contatto con il lievito, guai a voi!), <span style="color:#008080;"><strong>15 grammi di lievito di birra fresco</strong></span>, <span style="color:#008080;"><strong>2 cucchiai d&#8217;olio extravergine</strong></span> e <span style="color:#008080;"><strong>225 grammi di acqua tiepida</strong></span>. Impastate velocemente, rovesciando la pasta su un piano, e formate una palla, che farete riposare sotto un canovaccio umido <span style="color:#008080;"><strong>per dieci minuti</strong></span>, dopo averla spennellata leggermente con poco olio. Io ho sostituito il lievito fresco con <span style="color:#008080;"><strong>mezza bustina di lievito secco</strong></span> e ho aggiunto un paio di cucchiai abbondanti di<span style="color:#008080;"><strong> semi di Nigella</strong></span> (ma guarda il caso <img src='http://www.fudgella.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  &#8230;).</p>
<p style="text-align:justify;">Oliate per bene una teglia capiente (diciamo&#8230; 30&#215;45? Più o meno, su), appoggiatevi l&#8217;impasto e <strong><span style="color:#008080;">fate riposare ancora dieci minuti</span></strong>. A questo punto, <span style="color:#008080;"><strong>stendete la focaccia con il mattarello</strong></span>, muovendolo <strong><span style="color:#008080;">delicatamente</span></strong> soltanto una volta verso l&#8217;alto ed una verso il basso sulla superficie della pasta, cercando di non schiacciare le bolle d&#8217;aria. Fate <span style="color:#008080;"><strong>riposare altri venti minuti</strong></span>.</p>
<p style="text-align:justify;">Quando l&#8217;impasto sarà praticamente raddoppiato, <span style="color:#008080;"><strong>allargate la pasta con le dita</strong></span>, creando i caratteristici &#8220;crateri&#8221; sui quali spennellerete generosamente <span style="color:#008080;"><strong>la salamoia</strong></span>. Fate riposare <span style="color:#008080;"><strong>ancora </strong></span><span style="color:#008080;"><strong>venti minuti</strong></span> (giuro che dopo è quasi fatta).</p>

<p style="text-align:justify;">La lunga attesa (lunga? state scherzando?) è finita: cospargete la focaccia con <span style="color:#008080;"><strong>una manciata di aghi di rosmarino</strong></span>, infornate per circa 25 minuti ed ecco pronta la vostra meravigliosa focaccia, in perfetto stile Locanda Locatelli <img src='http://www.fudgella.com/wp-includes/images/smilies/icon_biggrin.gif' alt=':D' class='wp-smiley' />  .</p>

<li class="instruction">Cuocete il riso come se fosse un risotto: scaldate burro e olio in una casseruola capiente, aggiungete il riso, tostatelo e portatelo a cottura con il brodo vegetale. Una volta cotto, salate, pepate e aggiungete lo zafferano. Completate con il parmigiano grattugiato, a vostro piacere. Mettete da parte una volta cotto, e fatelo raffreddare: ci vorranno circa due ore.</li>
<li class="instruction">Tagliate a cubetti la mozzarella ed il prosciutto cotto. Preparate una ciotola capiente dove porrete il pangrattato. Scaldate l&#8217;olio di semi in una padella e cominciate a preparare gli arancini.</li>
<li class="instruction">Prendete il riso, precedentemente messo da parte, e aggiungete le uova, una alla volta. Mescolate bene, se necessario anche con le mani (magari mettetevi un paio di guanti usa e getta, prima di cominciare!). Formate delle palle grandi circa quanto un palmo, appiattitele e riempitele ogni disco con abbondanti prosciutto e mozzarella. Chiudete ogni disco formando nuovamente una palla, rotolatela nel pangrattato e mettetela su un vassoio, nell&#8217;attesa.</li>
<li class="instruction">Una volta che avrete confezionato tutti gli arancini, cominciate a friggerli, pochi alla volta per far sì che la temperatura dell&#8217;olio non cali eccessivamente. Scolateli una volta che sono diventati ben dorati e fateli sgocciolare su abbondante carta assorbente. Servite ben caldi.</li>

<p style="text-align: justify;">Vi avevo detto della lotta semantica, no? Secondo me, infatti, questi erano dei <strong>supplì al telefono</strong> dalla forma atipica: il supplì, il tipico snack fritto a base di riso che si trova in quasi tutte le pizzerie del Lazio, è una polpetta allungata che ha la caratteristica farcitura filante a base di mozzarella. Non sapevo, invece, che il supplì al telefono è rosso! Qualche settimana fa, infatti, sono andata a Roma a vedere la <a title="Steve McCurry a Roma" href="http://www.macro.roma.museum/mostre_ed_eventi/mostre/steve_mccurry" target="_blank">mostra di Steve McCurry alla Macro</a>: ho pranzato in una pizzeria a taglio e, invogliata dal loro aspetto, ho mangiato due supplì. Quando li ho aperti, ho scoperto che si trattava di polpette di riso condite con sugo di pomodoro. Per cui, quelli che abbiamo mangiato a casa non erano proprio supplì. Facendo una piccola ricerca sul web, ho invece scoperto che l&#8217;<strong>arancino siciliano</strong> può essere, appunto, <strong>al burro</strong>, ovvero con mozzarella e prosciutto. L&#8217;aggiunta di zafferano noi ce la siamo dimenticata, ma ve la consigliamo calorosamente!</p>

<p style="text-align:justify;">Sto per aprirvi il mio cuore, badate bene. Se ho scelto di rivelarvi uno dei miei <strong><span style="color:#ff1493;">cavalli di battaglia,</span></strong> beh allora vuol dire che ve lo meritate sul serio, miei piccoli lettori <img src='http://www.fudgella.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  . Aprite i vostri quadernini di appunti culinari e scrivete, in bella grafia e con una penna rossa o un Uniposca dorato (ancora meglio) &#8220;<span style="color:#ff1493;"><strong>ricetta del Danubio</strong></span>&#8220;. Va bene, ve lo concedo, la sto facendo un po&#8217; lunga e voi magari non sapete neanche cos&#8217;è il Danubio. Vi dirò che neanche io lo sapevo, fino a qualche anno fa, ovvero fino a quando non l&#8217;ho assaggiato a casa del <span style="color:#ff1493;"><strong>Ciarla</strong></span> ed ho pensato che dovevo assolutamente farmi dare la ricetta dalla sua mamma. Si tratta di un <span style="color:#ff1493;"><strong>brioche salata</strong></span>, composta da tanti panini rotondi morbidissimi, ripieni di formaggio, salumi e ciò che più vi ispira al momento. Ideale per <span style="color:#ff1493;"><strong>picnic, scampagnate e buffet freddi</strong></span>.<span id="more-124"></span></p>

<li>3 uova</li>
<li>100g di latte</li>
<li>100g di burro</li>
<li>25g di lievito di birra fresco</li>
<li>550g di farina di forza (<span style="color:#ff1493;"><strong>Manitoba</strong></span> va benissimo)</li>
<li>1 cucchiaio di sale</li>
<li>1 cucchiaio di zucchero</li>
<li>2 cucchiai di parmigiano grattugiato</li>
<li>ripieno a piacere (prosciutto cotto ed emmenthal, stracchino e salsiccia, funghetti e provola&#8230;)</li>
</ul>
<p style="text-align:justify;">Sciogliete <span style="color:#ff1493;"><strong>il lievito nel latte tiepido con lo zucchero</strong></span>, mescolatevi un po&#8217; di farina e quindi il sale, badando di non metterlo direttamente a contatto con il lievito (altrimenti blocchereste la lievitazione). Spezzettate il burro nella rimanente <span style="color:#ff1493;"><strong>farina mescolata al parmigiano</strong></span>, unitevi il &#8220;lievitino&#8221; e impastate vigorosamente: unite per ultime le uova già sbattute. L&#8217;impasto deve risultare liscio ed elastico, per cui la <span style="color:#ff1493;"><strong>lavorazione a mano della pasta</strong></span> vi porterà via almeno dieci-quindici minuti. Lasciate quindi lievitare la pasta finché non avrà raddoppiato il suo volume: ci vorrà circa un&#8217;ora e mezza, ma tutto dipende dalla temperatura della stanza e dalla stagione. L&#8217;importante è stare attenti a <span style="color:#ff1493;"><strong>non esporre l&#8217;impasto a correnti d&#8217;aria</strong></span>.</p>
<p style="text-align:justify;">Dividete ora l&#8217;impasto in <span style="color:#ff1493;"><strong>palline di grandezza media</strong></span>: calcolate che con questa dose ve ne dovrebbero venire <span style="color:#ff1493;"><strong>circa 16</strong></span>. Stendete ogni pallina con il mattarello, ponete un cucchiaino abbondante di ripieno al centro e richiudete il cerchio di pasta <span style="color:#ff1493;"><strong>come se fosse una mozzarellina</strong></span>. Distribuite le palline l&#8217;una accanto all&#8217;altra, sul fondo di una tortiera tonda imburrata e infarinata, avendo l&#8217;accortezza di porre la chiusura della pasta sul fondo e <span style="color:#ff1493;"><strong>la parte liscia in superficie</strong></span>. Spennellate i fagottini con un uovo sbattuto e, se vi piacciono, cospargeteli di semini (<span style="color:#ff1493;"><strong>papavero</strong></span>, <strong><span style="color:#ff1493;">sesamo</span></strong>, <span style="color:#ff1493;"><strong>finocchio</strong></span> o <span style="color:#ff1493;"><strong>cumino</strong></span>). Lasciate lievitare nuovamente il tutto, quindi infornate <span style="color:#ff1493;"><strong>a 180°C per circa quaranta minuti</strong></span>. Servite tiepido.</p>

<p style="text-align: justify;">La latitanza da queste pagine è dovuta semplicemente al fatto che ho scoperto di starmi antipatica: più precisamente, non sopporto l&#8217;idea di non essere in grado di fare qualcosa come vorrei (ma guarda che originalità, sarò sicuramente l&#8217;unica al mondo). L&#8217;ho realizzato solo oggi (cioé ieri, o miei cari lettori), mentre preparavo la ricetta per partecipare al contest <strong>Pasta, Tartufo e 2.0</strong> indetto dall’<a title="Tuber.it, il portale del Centro Nazionale Studi Tartufo" href="http://www.tuber.it/" target="_blank">Associazione per il Centro Nazionale Studi Tartufo</a>, in collaborazione con l’<a title="Ente Fiera internzionale del Tartufo bianco d'Alba" href="http://www.fieradeltartufo.org/" target="_blank">Ente Fiera Internazionale del Tartufo</a>, il Comune di Alba e pasta Agnesi.</p>

<p style="text-align: justify;"><span id="more-790"></span>Sì, perché sono stata scelta per partecipare al concorso insieme ad altri foodblogger e ho ricevuto a casa (in Svezia, mica a La Vettola, che queste son persone serie!) un mirabolante pacco con 5 pacchi di pasta Agnesi di formati diversi, un bellissimo affetta tartufo (che manca po&#8217; mi porto via un dito da quanto è affilato, va come una scheggia!) e, soprattutto, 30 grammi di profumatissimo tartufo bianco di Alba, che se ora il nostro monolocale sa di tubero fino alla fine dei tempi sapete a chi dare la colpa <img src='http://www.fudgella.com/wp-includes/images/smilies/icon_razz.gif' alt=':P' class='wp-smiley' />  La sfida (come direbbero a MasterChef)? Preparare una ricetta creativa a base di tartufo e pasta secca Agnesi&#8230;</p>

<p style="text-align: justify;">Dicevamo, mi sto antipatica. Mi sto antipatica perché non so fare le foto, e mi incavolo perché non so fare le foto, pur sapendo di non saperle fare, e pur non facendo niente per migliorare la situazione (comprare un libro, fare un corso, mettere in calendario modalità &#8220;va-fatto-cascasse-il-mondo&#8221; un&#8217;ora alla settimana di esercizi per imparare a usare almeno la punta e scatta). Quindi, quando per la prima volta mi si invita a partecipare a un concorso così figo, diciamocelo, mi girano un po&#8217; al pensiero di corredare il mio seppur divertentissimo e brillante post (ah ah ah, basta, che divento rossa) con foto mediocri.</p>

<p style="text-align: justify;">Smadonnamenti fotografici a parte, torniamo alle cose importanti. Non sono un&#8217;esperta nel cucinare col tartufo, ma l&#8217;ho mangiato un numero di volte sufficiente per sentenziare che, solitamente, più la ricetta è semplice, migliore è il risultato. Solo che non posso mica partecipare con una pasta al burro con grattugiata finale di tartufo, che figura ci farei? La mia reputazione di foodblogger (peraltro già in disgrazia causa parziale abbandono della dashboard) tracollerebbe definitivamente, non se ne parla neanche. Ho allora pensato ai ravioli che a volte ha fatto La Madre per Natale, con ragù di carne rigorosamente senza pomodoro e un tocco finale di tartufo, e ho deciso di provare a ricreare quell&#8217;atmosfera delle feste <img src='http://www.fudgella.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  Visto che il contest prevedeva l&#8217;uso di pasta secca <a title="Pasta Agnesi" href="http://www.colussigroup.it/index.php/Marchi/Agnesi" target="_blank">Agnesi</a>, ho fatto una piccola cernita dei formati mi erano stati messi a disposizione nel kit e ho scelto senza esitare un attimo i paccheri, uno dei miei formati preferiti, proprio perché la forma permette alla pasta di diventare dei saccottini ripieni di sugo&#8230; mmmh&#8230;</p>

<p style="text-align: justify;">Quello che ho voluto fare, però, è stata una modifica che facesse incontrare la mia tradizione familiare e la nazione che gentilmente mi ospita da un anno a questa parte. Ok, la ricetta è quella di casa, il tartufo e la pasta sono italiani, ma il ragù è fatto con un ingrediente tipicamente svedese: una salsiccia di maiale con patate e orzo, ovvero, sua maestà l&#8217;isterband. L&#8217;isterband, salsicciotta originario dello Småland, è diventata la regina di casa nostra soprattutto da quando l&#8217;abbiamo provata sulla pizza, perché sinceramente ci sta da dio. Ha un sapore intenso e, a seconda della ricetta, leggermente acidulo, che diminuisce nelle varietà più affumicate&#8230; insomma, fidatevi, è bona <img src='http://www.fudgella.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  Tra l&#8217;altro, e scusate se è poco, ricorda vagamente la salampatata piemontese che ho mangiato al <a title="Salone del Gusto 2008, un set su Flickr" href="http://www.flickr.com/photos/fudgella/sets/72157615923614806/" target="_blank">Salone del Gusto</a> qualche anno fa, quindi avete visto che popò di collegamenti internazionali che vi faccio? <img src='http://www.fudgella.com/wp-includes/images/smilies/icon_biggrin.gif' alt=':D' class='wp-smiley' />  Bene, è finito l&#8217;articolo divulgativo, eccovi la ricetta vera e propria!</p>

<li>300 grammi di manzo macinato</li>
<li>150 grammi circa di isterband (sostituite con salsiccia locale o macinato di maiale per un ragù più tradizionale)</li>
<li>1 carota</li>
<li>1 cipolla</li>
<li>1 costa di sedano</li>
<li>due foglie di alloro</li>
<li>olio d&#8217;oliva</li>
<li>320 grammi di paccheri Agnesi</li>

<p>Vi devo davvero dire come fare il ragù? No, vero? Perciò, dopo aver fatto il ragù e averlo fatto cuocere un&#8217;oretta a fuoco lento, accudendolo con tanto amore, cuocete i paccheri in tanta (veramente tanta, o rischiate l&#8217;effetto colla) acqua salata, scolandoli al dente (e che ve lo dico a fare?). Mantecate i paccheri con il sugo in padella, aggiungendo poca acqua di cottura se necessario, e impiattate. A piacere, grattugiate il tartufo bianco sulla pasta e godetevi questo popò di meltinpot culinario <img src='http://www.fudgella.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

E visto che oggi è giovedì, non posso non &#8220;incignare&#8221; (si dice, fidatevi) questa rubrica se non con il classico piatto svedese del giovedì. Da noi giovedì gnocchi, da loro minestra. Signori e signori, vi presento la <strong>minestra di piselli gialli</strong>, altrimenti detta <strong>ärtsoppa</strong>.</p>

<p style="text-align: justify;"><span id="more-828"></span>La prima volta che mi sono imbattuta nella minestra di piselli gialli è stato quando, da bambina, leggevo le avventure di <strong>Martina di Poggio di Giugno</strong>, il mio libro preferito. La piccola protagonista del romanzo di Astrid Lindgren, in svedese <strong>Madicken</strong>, abita in una non precisata cittadina svedese e vive la sua infanzia all&#8217;inizio del ventesimo secolo, tra le due guerre mondiali. In un memorabile episodio, la sorellina di Martina, Lisa, si infila un pisello nel naso e deve correre dal medico per farselo togliere. Succedeva proprio di giovedì, e questo perché</p>

<p style="text-align: justify;">L&#8217;ultima volta che ho mangiato la minestra di piselli gialli fuori casa, invece, è stato qualche settimana fa a <a title="Skansen" href="http://www.skansen.se/" target="_blank">Skansen</a>, al ristorante <a title="Stora Gungan Tavern" href="http://www.skansen.se/en/plats/stora-gungan-tavern" target="_blank">Stora Gungan</a>, dove ci hanno servito una scodella fumante accompagnata da un piatto con carne di maiale lessa, ovvero salsiccia artigianale e pancetta, e senape fatta in casa. So cosa state pensando: a raccontarlo magari non sembra, ma è buonissima, una combinazione davvero azzeccata. Ne potete vedere una versione più cheap nella puntata del programma televisivo di Jamie Oliver, <a title="Jamie Does Stockholm - YouTube" href="http://www.youtube.com/watch?v=ph-1IwNhu8A" target="_blank">Jamie Does Stockholm</a>, dove Jamie la mangia insieme ai ragazzi della Högvakten, le guardie reali.</p>

<p style="text-align: justify;">Ogni giovedì troverete la minestra di piselli gialli in tantissimi ristoranti e café di Stoccolma, e suppongo un po&#8217; in tutta la Svezia. Potete averla con o senza carne di maiale (fläsk), e tradizione vuole che il dolce che la accompagna sia costituito da pancakes con panna e marmellata (pannkakor med sylt). La trovate anche al supermercato già pronta, nella forma di un salsicciotto venduto al banco frigo: arrivati a casa, non dovrete far altro che tagliare il salsicciotto di plastica, &#8220;spremere&#8221; la minestra nella pentola e scaldarla. Io di solito la preparo partendo dai piselli gialli secchi, che lascio in ammollo una notte e cuocio in abbondanta acqua con rosmarino, sale e pepe. Una volta cotto, frullo tutto con il minipimer ed ecco fatto!</p>

<p style="text-align: justify;">Se non ricordo male, li ho fatti con <strong>200g di farina</strong>, <strong>200ml di latte</strong> più o meno, un <strong>uovo</strong> e <strong>mezza tazza di spinaci già cotti</strong> e tritati finemente con la mezzaluna, più abbondanti grattugiate di <a href="http://www.clal.it/index.php?section=piave">formaggio delle dolomiti</a> semi stagionato&#8230; eran buoooooni! Dopo averli lessati in acqua salati, tocco finale la <strong>rosolatura nel burro e il topping di speck</strong>&#8230;. <img src='http://www.fudgella.com/wp-includes/images/smilies/icon_biggrin.gif' alt=':D' class='wp-smiley' /> </p>
